Hummus-Stuffed Red Pepper
I was looking for something I could make in under 5 minutes that was flavorful and healthy, and this fit the bill. The crisp, sweet pepper is just the right touch for the heartiness of the hummus.
Ingredients:
1 large red pepper
about 1 cup hummus
black pepper
Instructions:
1. Cut the pepper in half and take out the seeds and stem.
2. Fill the inside with hummus.
3. Grind fresh black pepper on top. Enjoy!
