COOKING: MEXICAN PARTY SOUP
Mexican Party Soup

This is tasty on its own, but it's most fun when you get a big group of people together to make it.

Soup ingredients:
2 large zucchinis, diced and sauteed
1 large red pepper, diced and sauteed
1 large onion, diced and sauteed
1 can black beans, rinsed and drained
1 can corn, drained
1 can diced tomatoes with green chilies
2 cans cheddar cheese soup
1 can vegetable broth
1 small can chopped olives
1/2 package Fantastic brand taco filling (optional) 1 cup cooked rice (optional)

Heat Level (add as desired):
tabasco sauce
green tabasco sauce
black pepper
chili powder
cayenne pepper

Garnish:
1 bag coarsely crushed tortilla chips

Instructions:
1. Invite 4-10 of your closest friends over for dinner. Ask each of them to bring an ingredient on the list below. (You will provide the rest.) Don't tell them what you're making -- it will be a surprise.

2. Set a large dutch-oven sized pan on the stove, and have your ingredients already combined inside when people start to arrive. After everyone is there, take people into the kitchen to chop, drain and saute their ingredients.

3. The party takes place in the kitchen, as people share and work together. Play music.. Think of the kitchen scene in "The Big Chill" without the '80s hair.

4. Heat the soup on medium, then serve in bowls topped with the coarsely crushed tortilla chips. Move the party into the dining room.
